Sweet potato au gratin

We gathered today in a different way! Where our traditional Easter Sunday would consist of a huge family #gathering from Grandmas to cousins, an Easter egg hunt and a large meal to end the day, today was far more low key.

A more slow as we go type of day, livin is easy feel. Taking our time to embrace Easter to the fullest! From food prepping to egg hunting, we still celebrated this holiday despite the circumstances. I woke up knowing what was on the menu for today, excited to start #cooking. I’m such a visual person I lay everything out so I can see what needs to be prepped. I wanted to try a new dish similar to #augratin #potatoes but with #sweetpotato. This meal needed a sweet element with all the savory dishes. What else pairs better together with sweet potato than brown sugar and #cinnamon. I also added in #spice DUH! A few pinches of chilli powder to add pizazz.... why not! A mixture of 1/2 cup brown sugar, 1 tsp cinnamon, 1/4 cup maple syrup, half stick of butter melted and 1/2 tsp chilli powder poured over sliced sweet potatoes, baked at 350 for about 45 mins. VIOLA!!!

A sweet addition to our Easter Sunday meal. We built up an appetite after a fun-filled morning of Easter egg hunting, visiting with the #easterbunny while keeping our #socialdistancing and entertaining a sugar crazed toddler. Everything just flowed so well today, #thankful to be able to celebrate despite this odd time we are all facing. #staysafe and #stayhome This too shall pass!
